all classes can do that. depending on the boss and how he phases, either condi builds are stronger or power builds. also here comes into play if its a long bossfight, or a bossfight with short phases where you have to burst.
Currently holosmith is the go-to choice for engi, having insane power dps in both sPvP and PvE. Holosmith is easily one of the best dps classes. But when it comes to doing 5 man stuff you'll have your support covered. Necro+Mesmer. Mesmer because portals are always good in dungeons and such, and necro because it's by far the most capable "one man army" for any pve content. I had a blast doing dungeons and group events with a Reaper and Tempest duo.
In general, the classes with the highest base health are Warrior and Necromamcer. Heavy classes have the most armour, so by these two things combined, Warrior is the tankiest class on paper. But Necromancer is still strong, due to their second health bar in shroud and/or barrier application.
While I main necro also and really enjoy the versatile builds. I do find the class lacking in solo farming builds, which is a part of PVE I highly enjoy. I only play around with the spirit spammer builds for UW solo farm and I used to run a 55 hp necro, I think, but otherwise there are limited options.
A better snipe burst class in WvW with none of the drawbacks of clones or being completely cancelled out by guardian reflect spam like Virtuoso. Mesmer used to be better in open world PvE for solo content (which doesn't matter much), but specter came in and it's basically a better scourge with more survivability and DPS.

The 2 best known playstyles are minion master (MM) and Spiteful Spirit (SS). These will also be the ones you will be asked to play most frequently by other party members. In high end PvE, Blood Is Power (BiP) necromancers are very often requested too. It can be upgraded with a scythe snathe (prefix), a scythe grip (suffix) and an inscription. You can carry up to 4 different weapon sets that you can swap with F1, F2, F3 and F4. For the dervish it is important to have multiple scythes ready for use as well as a longbow for pulling monsters to prevent an overaggro. .
